Heart Healthy Seafood Soup

Seafood Soup


  • 2 Onions
  • 2 Zucchinnis
  • 2 Red or Orange peppers
  • Any other vegetable you have available and enjoy in soups
  • 2 Cans of Diced Herbed Tomatoes
  • 2 Cans of Clams including the juice
  • 1 bag of shrimp (you can add scallops or mixed seafood as well)
  • 1 bag of fresh mussels
  • 2 tsps Garlic (or to taste)

Chop and saute the onions.  Add the rest of the chopped vegetables.  Add garlic and saute a few more minutes. Add tomatoes and shrimp.  Cook until the seafood and veggies are cooked.  10 mins.  Add mussels and cook until mussels have opened.  (Toss any mussels that don’t open.)

Serve with a side salad.  Delicious, healthy and EASY!  Great on a cold winter’s day!
